Ingredients

  • Cake:
  • 2 cups white sugar

Instructions

  1. Prep:
  2. Preheat oven to 350°F (175°C). Grease and flour a 9x13inch baking pan.
  3. Make the Batter:
  4. In a large bowl, beat sugar, oil, eggs, and 2 tsp vanilla with an electric mixer until smooth.
  5. Mix in flour, baking soda, baking powder, cinnamon, and salt until combined.
  6. Fold in shredded carrots and chopped walnuts (if using).
  7. Bake:
  8. Pour batter into the prepared pan. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
