Ingredients
- Cake:
- 2 cups white sugar

Instructions
- Prep:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13inch baking pan.
- Make the Batter:
- In a large bowl, beat sugar, oil, eggs, and 2 tsp vanilla with an electric mixer until smooth.
- Mix in flour, baking soda, baking powder, cinnamon, and salt until combined.
- Fold in shredded carrots and chopped walnuts (if using).
- Bake:
- Pour batter into the prepared pan. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
