Easy Fudgy Matcha Brownie

Ingredients

  • 113 g unsalted butter
  • 114g white couverture chocolate
  • 1012g matcha powder
  • 180g powder sugar
  • 2 eggs + 1 egg yolk
  • 1 g salt
  • 110g ap flour + 20g mochiko/glutinous rice flour (can sub for 130g ap flour)
  • Yuzu or orange zest (optional)
  • 1/8 tsp baking powder (optional)

Instructions

  1. Preheat oven to 350°F and line an 8x8 or 7x7 square pan with parchment paper.
  2. Melt butter and chocolate.
  3. Sift in matcha to melted chocolate and stir.
  4. Beat eggs, egg yolk, and powdered sugar until pale and airy.
  5. Combine matcha chocolate with eggs mixture. Add flour, baking powder, salt, and zest.
  6. Bake for 25-30 minutes.
  7. Cool completely before serving.
